grilled pineapple

If I had to pick a fruit, any fruit, that I could eat day after day, I’d have to choose pineapple … on the grill. My uncle has mastered this recipe and Chris and I wanted to give it one last go before the warm weather disappears completely. The best part is that it’s really, I mean really, simple.

step 1: cut your pineapple in four lengthwise strips

step 2: grill each slice on all sides (starting with the skin) until you have nice golden grill marks. (note: be sure to cut off the pointy center so you have four flat sides to grill. We forgot this time. Oops}

step 3: meanwhile, heat brown sugar, butter and a one or two drops of vanilla on the stove until it becomes a syrup.

step 4: brush the brown sugar mixture onto the pineapple and heet until it caramelizes.

and voila! the most delicious side dish around. (now just cut slices)
