When summer rolls around, I find myself craving light, cold and fishy meals. So when I found this recipe for a summer salad with lump crab I couldn’t resist. It was really simple (the theme of my cooking) and features some of my favorite foods: avocado, corn, tomatoes and, of course, crab meat. I added some red, white and blue Trader Joe’s tortilla chips for a deliciously light, flavorful and festive summer dinner.
