a healthy meal

Nothing like a dress fitting to inspire a healthy meal! Enter salmon and grilled veggies. I cooked the salmon on a skillet with a little olive oil spray, salt and pepper for about 20 minutes — until flakey. I skewered onion, red bell pepper, zucchini and squash, brushed them with olive oil, added a little salt and pepper and grilled them on all sides for about 10-15 minutes. Voila! A healthy dinner fit for a wedding dress. Oh, and don’t forget the wine. It’s not healthy without antioxidants!
