michigan adventure

Every year, my mom packed up the van and drove her four daughters 12 hours to New Jersey to spend summer down the shore. The ride away from Michigan was always exciting, with us each of us guessing the exact minute we’d arrive at grandma’s door. The return trip, however, was nothing but tears and threats to report my parents to DYFS for making us leave. Just days after my high school graduation, I moved east and never looked back, that is, until my nephew was born.

We spent Christmas outside of Detroit, where my older sister is a pediatric resident, my brother-in-law is gearing for med school and my mom tends to the little rascal. If you had told me 15 years ago that I’d one day sob uncontrollably leaving Michigan, I’d have had you committed. But baby nephews change the world, and there I sat in the passenger seat for a 10 hour car ride back east threatening to call DYFS on my fiancé.

I mentioned in earlier posts that the holidays are all about the food for my family, and this delicious treat is the cats meow for us Hungarians. it’s called Hungarian nutroll, and, sorry, but I can’t give you the recipe!

my sister worked at least one 30-hour shift during our stay, and my brother-in-law often works the ER night shift. luckily, on our last night, they were both off so we took a trip into downtown Detroit for happy hour at Iron Chef Michael Symon’s Roast. I’ve never had egg on a burger, and I’m not one for meat on meat, but the bar tender said no substitutions and man am I glad he did.

at nearly two-and-a-half, this little guy is non-stop entertainment. we taught him to say “Oohh noo [insert anyone's name including the dog],” “you’re ridiculous,” “hey babe” and “I miss you.” and to my delight, I even got a goodbye kiss before we left. (yes, I’m wearing his goggles. I’m the crazy aunt who stops at nothing to get a belly laugh.)

cupcake catastrophe

In my family, Christmas is all about the food. We eat a traditional Slovak and Hungarian meal on Christmas Eve, followed by Hungarian treats and tons of baked goodies on Christmas day. This year, my sisters and I decided to try our hands at red velvet cupcakes with cream cheese icing (complete recipe below). We used my gifted Williams-Sonoma cupcake recipe book and went to town. Only, the result was less than delicious.

our mistake: though it looks pretty in pink, we used all-purpose flour rather than cake flour, which was disastrous. who knew something so simple could make such a huge difference?

I could tell something was off when I scooped the batter into the cups. it was super thick and heavy, while the recipe said it should be light and fluffy.

the result: a dense block of bread. On the bright side though, the cream cheese icing was absolutely amazing. as you can see, we all licked it right off the cake.

Red Velvet Cupcake Recipe:
(makes 12 cupcakes) 

Ingredients:
1 1/2 cup CAKE flour
2  tbsp unsweetened cocoa powder
3/4 tsp baking powder
1/4 tsp salt
1/2 cup buttermilk
1 tsp vanilla extract
1/2 tsp white vinegar
4 drops red food coloring (be generous, 4 is not enough)
3/4 cup sugar
4 tbsp unsalted butter (room temp)
1 large egg (room temp)

Preheat oven to 350 degrees F.
Sift together cake flour, cocoa powder, baking powder and salt into a bowl. In small bowl, whisk together egg (the directions were missing the egg so we guessed that this is where it goes), buttermilk, vanilla, vinegar and food coloring. In another bowl, use an electric mixer on medium-high speed, beat the sugar and butter together until light and fluffy, 2-3 minutes. Add the flour mixture in 3 additions, alternating w/ the buttermilk mixture in 2 additions, beating on low speed until combined.
Bake until toothpick inserted into center of cupcakes comes out clean, 20-22 minutes. Let cupcakes cool completely before spreading with icing.

Cream Cheese Icing Recipe:
(makes 2 cups) 

Ingredients:
12 oz cream cheese (room temp)
6 tbsp unsalted butter (room temp)
1/2 tsp vanilla extract
1 cup confectioners’ sugar, sifted

In a bowl, with an electric mixer on medium-high speed, beat the cream cheese, butter and vanilla together until light and fluffy, about 2 minutes. Gradually beat in sugar and mix until thoroughly combined. Use right away, or if consistency is too soft, refrigerate until frosting is spreadable, about 15 minutes.

life’s little pleasures

I’ve spent much of my time these past few weeks last-minute Christmas shopping, visiting family I won’t see over the holidays, prepping for a 10-hour road trip and finishing some work before the office closed until after the New Year. But as I mentioned in my last post, I love this time of year. Call me cheesy, but Thanksgiving and Christmas always get me searching for the little things that make life prettier, simpler and more fun. santa baby

Christmas is one of my favorite holidays. My mom’s amazing cooking, day after day of laughing and hanging by the tree with family (especially my baby nephew!), lots of wine, frothy drinks and Christmas morning mimosas and baking until the oven breaks. There is nothing better. With Christmas literally around the corner, you can imagine just how excited I am — my fiancé and I don’t have a tree this year so picture red lips, green PJs, red nails and lots of classic Christmas music!! So I want to share with you my all-time favorite Christmas song. Mariah Carey and the Waitresses are hard to beat, but there’s nothing quite like a fur-clad, stunningly beautiful Eartha Kitt serenade to get you in the spirit.
